Vegan Tofu Scramble With Spinach

Ingredients

2 tablespoons olive oil

2 tomatoes

2 cloves garlic

3/4 cup sliced fresh mushrooms

1 bunch spinach

1 pound firm or extra-firm tofu

1/2 teaspoon soy sauce

1 teaspoon freshly squeezed lemon juice

Salt and pepper to taste

Instructions

Warmth the olive oil in a skillet and saute the tomatoes, garlic, and mushrooms over medium warm temperature for 2 to 3 minutes.

Diminish the warmth to medium-low and include the spinach, crumbled tofu, soy sauce, and lemon juice. Cover and cook dinner for 5 to 7 minutes, blending at instances.

Sprinkle with salt and pepper before serving.

Serve.
